Steps to make 辣炒鸡胗

  • 1.鸡胗切片冲洗几遍。
  • 2.冷水下锅,放入3勺料酒,2勺盐,五香粉卤煮。水开后关火闷5分钟!这一步主要是除腥再入味。
  • 3.煮鸡胗的时候切好配菜备用。线椒切圈,姜蒜切片,干辣椒葱切段。
  • 4.鸡胗捞出过凉水冲去浮沫。多冲几遍。
  • 5.锅底烧热油下葱姜蒜辣椒炒香。加一勺豆瓣酱。
  • 6.炒出红油下入鸡胗,调入料酒,生抽,老抽,蚝油翻炒。
  • 7.鸡胗炒熟入味时加入辣椒圈炒断生。
  • 8.成品图。
  • 9.配上南瓜馒头太香了。
