【炸酱面,花样做】:茄丁面

    • 1.茄子洗净去蒂,切见方小丁。
    • 2.五花肉、里脊肉分别切成小丁;红彩椒洗净切蒂、籽,切细丝。
    • 3.将茄丁浸泡在加盐的清水中2-3分钟,捞出沥干水分。
    • 4.茄丁均匀的裹上薄薄的一层玉米淀粉。
    • 5.锅置火上油烧至7成热,下入茄丁炸制。
    • 6.炸至金黄色捞出控油待用。
    • 7.锅置火上小火下入五花肉、里脊肉丁煸炒出油。
    • 8.甜面酱加入适量清水调匀。
    • 9.倒入酱,小火翻炒至肉丁、酱混合均匀。
    • 10.小火慢熬至酱汁浓稠。
    • 11.放入茄丁、蒜末,勾薄欠。
    • 12.蒜香扑鼻即可关火。
    • 13.面粉加清水和成面团,擀大薄片;用家用面条机制成细条面煮熟挑入碗中。
    • 14.浇上茄丁卤,码上红彩椒、香菜段即可食用。
