【私房香辣虾】--- 轻松做出一道喜气宴客菜
香辣虾的制作,说难也不难,但想要做得色、香、味,也要讲究一点小技巧。

1:制作香辣虾,不但要选择活虾,而且不宜选择个头太大的,这样难以入味。

2:虾要先腌制去腥、入味,腌好以后用厨房纸吸去多余的水份,再撒上适量干淀粉,这样炸出来的虾,外酥里嫩。

3:出锅前撒入适量炒熟的白芝麻,可以大大提升成菜的滋味。

4:为了让虾更滋味,可以选择稍微开背,不用开得很大。

5:去籽后的干红辣椒段用清水稍微浸泡,然后入锅炸,这样炸制的辣椒段不容易糊,颜色红亮,并且味道很香。

  • 1.准备好主料:活虾。
  • 2.准备好配料:干红辣椒剪成段,去籽,用清水稍微浸泡,两片生姜和一根葱白切成末、葱绿切成小段,熟白芝麻准备好。
  • 3.虾洗净,剪去虾枪。
  • 4.用牙签在虾身尾巴第二节处挑去虾肠。(如果开背,可以开背后挑出,我做香辣虾的时候喜欢稍微开下背,这样更滋味)
  • 5.处理好的虾放入盘子里,调入盐和料酒,加入两三片拍碎的生姜片和葱段,抓匀腌制片刻。
  • 6.腌制好的虾用厨房纸吸去多余的水份,然后撒入约一平汤勺的干淀粉,翻抖均匀,让每一只虾都能粘上。
  • 7.锅中烧热适量油,约7、8成热时把虾倒入。
  • 8.炸约一分钟左右,至外皮酥脆,捞出沥油。
  • 9.倒出炸虾的油,剩少许底油,改小火,下入赶红辣椒段煸出辣油和香味。
  • 10.把辣椒段拨至旁边,下入姜、葱末煸香。
  • 11.转大火,把炸好的虾倒入,翻炒均匀。
  • 12.出锅前撒入葱花和白芝麻即可。
