中秋临近,月饼当然少不了啦,近几年冰皮月饼非常流行,我也跟一下热潮,喜欢用它做成各种颜色的,好看不腻,放入冰箱冷藏,口感冰凉的,超好吃

  • 粘米粉80克
  • 澄粉80克
  • 糖粉60克
  • 300克
  • 红豆馅料250克

Steps to make 冰皮月饼

  • 1.提前把材料准备好备用
  • 2.把糯米粉、粘米粉、澄粉、糖粉全都放进碗里
  • 3.水加入碗里,拌成面团,静置30分钟
  • 4.静置好的面团盖保鲜纸,大火隔水蒸20分钟左右
  • 5.蒸熟的面团用刮刀搅拌至顺滑。待凉冷藏1小时再包馅料
  • 6.把冷藏好的面团和馅料分别分割成25克一个的小面团和小馅料搓圆
  • 7.把小面团放在掌心,用手压扁成面皮,,馅料放在面皮上,往里压,用虎口向上推收口扭紧,掌心搓圆即可
  • 8.准备一个50克的月饼模具,模具里涂少量糕粉,再把多余的粉倒出
  • 9.把包好的面团放入模具里,用力压下,把月饼推出来即可
  • 10.颜色用各种果粉调即可
  • 11.成品欣赏
