  • 薄荷叶随意

Steps to make 抹茶薄荷卷

  • 1.蛋黄和蛋白分离。蛋黄中加入10g白糖搅打均匀,加入16g玉米油搅打均匀,再加入16g牛奶搅打均匀。
  • 2.倒入过筛后的低筋面粉和抹茶粉,翻拌均匀。
  • 3.蛋白内滴入几滴白醋,分三次加入20g白糖,打发至湿性状态(拉出有小小的弯钩)即可。
  • 4.将准备好的蛋黄面糊加入蛋白糊中翻拌均匀。
  • 5.模具中预先垫入油纸或锡纸。将混合均匀的蛋糕糊倒入蛋糕模中,铺均匀,轻磕几下,震出气泡。
  • 6.放入预好热的烤箱中层,上下火175度,烤至表面上色,约13分钟左右即可。
  • 7.取出后倒扣在另一张油纸或锡纸上,趁热撕掉背面的锡纸,晾凉。
  • 8.待蛋糕胚彻底晾凉后,打发淡奶油。淡奶油中加入7g白糖,打发至硬性状态,加入切碎的薄荷叶,搅打均匀。
  • 9.将晾凉的蛋糕胚再次翻扣过来。将打发好的淡奶油抹匀在蛋糕胚上,末端留3cm左右不要抹奶油,卷时奶油会顺势推上的。
  • 10.蛋糕卷借助擀面杖的反转卷起来。
  • 11.用锡纸包裹好,两头拧紧,放入冰箱冷藏数小时定型。
  • 12.成品图。
