蒸鸡屎藤饼
鸡屎藤饼,又称乌芹藤饼。中国传统节日食俗,味道清香可口。广东省新会,特别是沙堆梅湾村地区清明节必备的过节小吃。鸡屎藤入中草药,还具有祛风利湿、消食化积、止咳、止痛、解毒、去湿、补血等功能。广东潮汕地区的人在久咳不愈、夜晚咳嗽厉害时,鸡屎藤熬汤更是必不可少的法宝
第一次尝试做鸡屎藤饼,原则上是用新鲜鸡屎藤做,用它的叶汁做出来乌黑乌黑的味道浓郁香甜美味。但,我们这里没有新鲜的鸡屎藤,只好用鸡屎藤粉代替,效果不理想。同时,最好用红糖,家里没有就用细白沙糖。

Steps to make 蒸鸡屎藤饼

  • 1.准备食材:鸡屎藤粉、糯米粉、粘米粉、生粉、细沙糖、蔬菜油。
  • 2.将粘米粉以及鸡屎藤粉倒入器皿。
  • 3.搅拌均匀。
  • 4.再加入细沙糖,继续搅拌均匀。
  • 5.倒入适量蔬菜油。
  • 6.然后倒入清水搅拌成糊状。
  • 7.倒入锅内中火煮沸,边煮边搅拌。
  • 8.煮至粘稠熟透。
  • 9.将煮好的粉放入器皿后分别加入糯米粉与生粉,过程之中需要加入适量热水,揉搓成面团。
  • 10.揉搓好之后,再做成小剂子。
  • 11.放入模内压好成饼型,倒出。
  • 12.做好饼之后需要预备一碗油以及一把刷子。
  • 13.锅里注入适量清水大火烧开,放入蒸架,将每一个鸡屎藤饼底部都涂上一层油,然后放入蒸架,盖上锅盖大火蒸十二分钟。
  • 14.时间够了打开锅盖取出。
