糖醋糍粑鱼
每年到了这个季节胖头鱼尾特便宜,只有五块钱一斤,因为鱼头都让饭店买去做剁椒鱼头,所以鱼尾就相对便宜了。碰巧我家人都喜欢吃鱼,一个星期最少要吃两次鱼,炖鱼汤,烧鱼块,清蒸,怎么做都喜欢吃。我家儿子喜欢我做糍粑鱼吃,有时干煎,有时糖醋,轮换着口味做着吃。
现在他读初三了,要上晚自习,每天还要送饭,做的饭菜不能太差,不是鱼就是肉,蔬菜也不能少,还要符合他的口味。往往我都是头天下午把鱼买好,让鱼贩给剁成块,回家洗净放入姜丝、黄酒、盐、花椒腌制一晚上,鱼也入味了,也不耽误傍晚给他送饭。这次做了糖醋口味的糍粑鱼,既开胃又下饭,带饭的时候多给他带几块,让同学也尝尝我做的鱼块。

Steps to make 糖醋糍粑鱼

  • 1.鱼块洗净,控干水分;
  • 2.加入适量姜丝,花椒,盐,黄酒,拌匀,盖保鲜膜,放入冰箱腌制一晚上;
  • 3.腌制好的鱼块取出,把姜丝和花椒拣出,(花椒和姜丝不要丢掉);
  • 4.姜丝碗中放入适量蒜碎;
  • 5.加入香醋2勺,白糖2勺,味极鲜酱油2勺,蚝油1勺,水适量,调匀成碗汁;
  • 6.鱼块里放入适量土豆淀粉;
  • 7.搅拌均匀,使每块鱼块都沾上淀粉;
  • 8.平底锅放入适量油,中小火把鱼块放入里面煎;
  • 9.一面煎制微黄,翻面再煎;
  • 10.煎制鱼块两面金黄至熟,盛出备用;
  • 11.锅中留底油,小火炒香干辣椒段;
  • 12.放入调好的味汁,中火烧开;
  • 13.放入煎好的鱼块,用铲子轻轻翻拌,使每块鱼块上都裹上糖醋汁;
  • 14.盛出即可享用了!
