虾仁涨蛋
虾仁涨蛋也算是比较有名气的中式家常菜。虽然类似煎鸡蛋,但是却又和煎鸡蛋有很大的不同。鸡蛋经过烤箱烤制,蛋香味充分激发出来,而里面藏的虾仁则依然保持鲜嫩的口感,是老少皆宜,蛮不错的一道菜。因中式做法要用猪油涂抹盘子和成品表面,我稍微改良了一下,用黄油代替猪肉,即融入了一点奶香味,有减少了油腻的口感

Steps to make 虾仁涨蛋

  • 1.鲜虾去皮剥出虾仁,背上切口,取出虾线,这样开口后滑炒出的虾仁也漂亮,全部处理好的虾仁,用厨房纸沾干表面水分
  • 2.虾仁放入碗里,加入留下的半个蛋清,加胡椒粉和1克的盐抓拌均匀,腌制10分钟
  • 3.鸡蛋打入碗中,留半个鸡蛋的蛋清备用。蛋液中加胡椒粉和盐,黄酒
  • 4.面粉和酵母粉放入碗中
  • 5.加少许水和成稀糊
  • 6.把面糊倒入打好的蛋液中
  • 7.充分搅拌均匀
  • 8.盘子在烤箱中预热几分钟,用黄油涂抹表面,这样成品即不沾盘子,也更香
  • 9.腌制好的虾仁在炒锅中快速滑炒至变色
  • 10.把蛋液倒入盘中,虾仁均匀 的放入
  • 11.烤箱120度预热5分钟,入烤箱上下火中层烤10分钟。
  • 12.取出,表面再涂抹一层黄油,这样烤好的成品表面不会太干,而且也更香
  • 13.烤箱温度调整到160度,再烤5分钟即可。烤箱中的鸡蛋膨胀的很高。取出遇冷会收缩
  • 14.烤好的虾仁涨蛋,虽然稍有收缩,但是鸡蛋依然是很松软的,虾仁非常鲜嫩。
