    Steps to make 夹心丸子

    • 1.准备食材。
    • 2.鹌鹑蛋煮好放凉后剥皮。
    • 3.青菜洗净,倒进放了盐和色拉油的开水里焯烫,捞出过凉后装盘。
    • 4.七瘦三肥的猪肉剁成末。
    • 5.肉馅里调入盐、姜末、料酒、生抽、淀粉、鸡蛋,加适量清水朝一个方向搅拌上劲。
    • 6.先把肉馅按成饼状,放上鹌鹑蛋。
    • 7.再用肉馅盖上,左右手摔打团成丸子。
    • 8.锅中倒油中小火,下入夹心丸子炸制。丸子炸成金黄色捞出沥油。
    • 9.锅中留底油,下入姜末、蒜末小火爆香,倒入开水,调入生抽、老抽、蚝油、白糖煮开。
    • 10.下入炸好的丸子炖煮15分钟(根据丸子的大小),起锅前放入鸡精捞出装盘。
    • 11.锅里汤汁继续烧开,调入水淀粉勾芡至浓稠。
    • 12.浇在丸子上即可。
