黑豆沙可用于广式月饼,各式中餐面点馅,用途广泛


黑豆,原产中国黑龙江、辽宁、吉林、安徽,现河南、河北、山东、江苏亦有种植。含有蛋白质、脂肪、维生素、微量元素等多种营养成分,属于滋补佳品,有养阴补气、滋补明目、祛风防热、活血解毒以及乌须发等药用。
1.清热解毒
中医认为,黑豆有除去胃中热痹、伤中、淋漏、下淤血、散五脏结积、去肿、消谷、止腹胀、去热毒、改善痉挛等疗效。
2.改善胃肠道
黑豆含有的膳食纤维及低聚糖不但能帮助肠道蠕动,使体内胀气与毒素顺利排出,改善便秘,而且还可以改善肠内菌群环境,起到整肠作用。
3.降低胆固醇
黑豆所含皂草甙有减少体内胆固醇的作用,能有效预防中老年人动脉粥样硬化和心血管疾病。
4.补血养肾
中医认为黑色属水,水走肾,黑豆作为黑色食物能够有利于补肾养肾。黑豆皮提取物能够提高机体对铁元素的吸收,带皮食用黑豆能够改善贫血症状。而人的肾主精血,肾脏得到滋养,身体的气血也会足。经常吃黑豆能够帮助补肾,缓解肾虚体弱、腰膝酸软、风湿痹病、关节不利等等不适症状。
5.美容护发
黑豆富含B族维生素及维生素E,是养颜美容所需的营养成分。此外,黑豆还含有丰富的泛酸,有乌发的功效。
6.抗老防衰
黑豆中的维生素E能够成为体内防止氧化的保护层:黑豆种皮释放的红色花青素,可清除体内自由基,抗氧化活性更好,增强活力。

  • 砂糖160g
  • 花生油220g
  • 1000ml

Steps to make 黑豆沙

  • 1.黑豆提前一夜泡
  • 2.洗净加入1000ml水,用压力锅煮30分钟
  • 3.煮好的黑豆用手可以直接碾碎就可以了,如果碾不碎的话那就得继续再煮10分到20分钟
  • 4.用破壁机打成泥
  • 5.如图,如果没有破壁机的话那么就用筛网过筛这样豆沙才会够细腻
  • 6.把豆沙倒入面包机桶(东菱T15W)调至翻炒干果功能先把豆沙翻炒20分钟分3次加入花生油,每一次都要充分吸收才可以加入下一次
  • 7.炒至油分完全吸收,即可加入砂糖继续翻炒
  • 8.翻炒至粘稠再分3次加入花生油,每一次都要充分吸收才可以加入下一次
  • 9.翻炒至可抱团即可
