Steps to make 情人李果酱

  • 1.优选进口情人李;
  • 2.将柠檬洗净、对切后榨汁,取30g,备用;
  • 3.将情人李洗净,去核,切成小丁;
  • 4.将李子丁、柠檬汁及冰糖,放入玻璃盆中,搅拌均匀,保鲜膜封好,放置于冰箱中8~12小时;
  • 5.将果酱瓶洗净,放入锅中,加水摸过瓶子,煮沸10分钟,关火后将瓶盖放入锅中,继续消毒10分钟;
  • 6.取出沥干水,倒扣果酱瓶,备用;
  • 7.从冰箱中取出倒入锅中,持续以中小火滚煮;
  • 8.捞去表面的浮物与气泡,煮时要不时搅拌,以免粘住锅底;
  • 9.30分钟左右,当锅中的水量渐渐减少约一半,酱汁浓缩,果肉变得透明熟软,再持续烹煮直到果泥开始有浓稠感出现,酱汁几乎收干,达到果酱煮糖凝固的终点温度103℃,将果酱装进瓶内,盖紧瓶盖后趁热倒扣,倒扣30分钟后洗净瓶身,即可食用或置于冰箱中冷藏;
