绿豆蓉月饼
自己做的桂花绿豆蓉!低油低糖,味道清新,用这个做的月饼真的可以吃的!

  • 色拉油40g(做馅)
  • 30g(做馅)

Steps to make 绿豆蓉月饼

  • 1.去皮绿豆放水淘洗干净,放足够的水泡3-5小时,然后控净水分,上高压锅隔水蒸20分钟(上汽)。桂花加20克开水泡好,将里面的水倒入绿豆,加30克糖,40克色拉油,搅拌均匀!按这个比例出来的馅硬度正好,就免去了放锅里炒制的繁琐!如果觉得不够细腻,可以放料理机里打一下!大家看我这个馅成品还不错吧(大包的那个)
  • 2.取140克糖浆加50克色拉油,半小勺水加1克苏打粉,搅打均匀,200克面粉过筛,加入,捏成面团,用保鲜膜包好松弛2个小时!我是先和好面,然后搞绿豆蓉的!瞧这个一大一小的比例!
  • 3.分皮,这个是儿子的活!!饼皮25克一个!
  • 4.分馅,继续!!!
