  • 蛋黄4个
  • 色拉油64g
  • 牛奶64g
  • 低筋面粉80g
  • 蛋白4个
  • 细砂糖60g
  • 黑可可粉10g

Steps to make 撞击视觉滴【黑旋风蛋糕卷】

  • 1.28x28烤盘垫油布或油纸
  • 2.黑可可粉用热水拌成无颗粒的细腻可可糊
  • 3.分离蛋白蛋黄
  • 4.色拉油、牛奶混合
  • 5.筛入低粉,用手持打蛋器混合到无颗粒
  • 6.加入蛋黄搅拌均匀
  • 7.制做蛋白糊。砂糖分三次加入蛋白,打到有大弯勾
  • 8.先将1/3蛋白糊加入蛋黄糊中切拌均匀
  • 9.再倒回剩下的蛋白糊中拌匀
  • 10.取出四分之一面糊与可可糊混合均匀
  • 11.先将原味面糊倒入模具,抹平
  • 12.再用裱花袋将可可面糊铺在上面,抹平
  • 13.用一根和普通火腿肠差不多粗的棒子如图所示绕S型划一遍
  • 14.烤盘转90度再如图来一次
  • 15.烤箱预热180℃,烤15分钟
  • 16.烘烤完成取出烤盘,用力震出热气,提着烤纸滑出烤盘,放在晾网上散热
  • 17.稍凉后,蛋糕片重新盖一张新的油纸翻转过来,放草莓酱抹匀
  • 18.连同油纸卷起,定型
  • 19.切片,大功告成~~
  • 20.下午茶走起
