这道橙香糖醋排骨,我省略了【炸】的程序,而是用【煎】来代替的,这样能够把排骨多余的油脂煎出来,减少了油腻感。而又添加了一丝橙香,使糖醋排骨更加清新爽口了。酸酸甜甜的味道与排骨的肉香,橙子的特有的香气混合在一起,那叫一个香,橙子入菜不但可以解腻,还可以开胃醒神,增加维生素C。
子排是指腹腔连接背脊的部位,它的下方是五花肉,片下的排骨长达30厘米,呈三角形斜切片状。子排的肉层很厚,隔着一层薄油还连了一块五花肉,油脂丰厚,肉质是所有排骨中最嫩的,适用于多种烹调方法和口味,只是口感略显油腻。

Steps to make 橙香糖醋排骨

  • 1.准备好猪子排和橙子。
  • 2.准备好八角 桂皮,葱切段,姜切片。
  • 3.把子排洗净切成小段。
  • 4.橙子洗净,挤出橙肉和橙汁。
  • 5.锅中注入水,下入子排焯水。
  • 6.焯水的子排沥干水分,放入汤锅中,加入葱姜 八角 桂皮和开水煮至8成熟。
  • 7.捞出,用厨房吸油纸,吸去水分后加入盐和料酒,腌制20分钟.
  • 8.取一碗,加入糖 醋 酱油 盐和适量的清水调成糖醋汁。
  • 9.锅中加入少量的油,下入腌制好的排骨。
  • 10.小火煎制排骨两面上色。
  • 11.倒掉多余的油脂,倒入糖醋汁和橙汁 成肉。
  • 12.大火烧开,转小火,烧至汤汁粘稠浓缩,使每块排骨都能均匀的裹上汤汁即可。
