洋葱炒牛肉
冬天最爱的一道小炒菜就是洋葱炒牛肉了。之所以喜欢,除了有童年的记忆外,还因为洋葱易储存,也是北方的常备蔬菜。

冬天的运动量少,但胃口却出奇地好,需要更多的能量来对抗寒冷,吃肉是最直接的能量储备来源。牛肉相比猪肉,脂肪含量少,而蛋白质又极为优质,此外还富含钙、磷、铁等营养素,多吃几口,没有长肉的顾虑。

用洋葱搭配,除了因为在口感上非常适合,还因为洋葱有通气的效果。不用担心吃多了肉肠胃不舒服。

这道小炒做法简单,味道浓香,下酒下饭都很棒,但是对于先放洋葱还是先炒牛肉总是在不断的讨论中。所以,我把我的做法跟大家分享一下,这也是我老妈炒了几十年总结出来的,特别实用。

Steps to make 洋葱炒牛肉

  • 1.牛里脊切薄片;分享一个把肉切均匀薄片的技巧,即把肉块放冰箱冷冻变硬,用手稍用力按能按出一个指坑的状态,取出后可轻松切薄片;如果硬到梆梆冻,需取出后回温才能切得动;我们把前面那种状态叫“酥冻”。
  • 2.紫皮洋葱清洗干净;洋葱有很多品种,这种颜色鲜艳的紫皮洋葱口感脆嫩,也不是特别辣,除了炒食,也很适合生食;而且紫白颜色跟牛肉搭配比黄皮洋葱更亮眼。
  • 3.将洋葱切“罗锅”细丝,即沿着洋葱的纹路切丝,每一根洋葱丝都有同样的弧度,这样切可以使洋葱加热后不怎么塌。
  • 4.炒锅中倒少许油,将洋葱丝扒拉几下,撒少许盐稍变软,盛出备用。
  • 5.锅中倒油,无需等油热,将牛肉片倒锅中,用铲子迅速划散,可使肉片保持独立不粘连。
  • 6.待表面变色后,撒少许盐和生抽,翻炒均匀,牛肉略出汤。
  • 7.迅速将洋葱丝和黑胡椒粉倒入锅中,翻炒几下可出锅。
  • 8.洋葱炒牛肉,肉片入味,洋葱清脆!
