清明前是食用螺蛳的最佳时令,此时螺肉肥美,有“清明螺,肥似鹅”和“清明螺,顶只鹅”的说法。过去买不起鹅的人家,下河塘摸盆螺蛳,用清水养两天,然后夹去尾端,放点葱姜辣椒煮熟,就是一盆好菜。有的就用腌菜卤煮煮,清淡爽口、味道非常鲜美。有的煮熟了挑出螺肉炒韭菜,那是打嘴不放的美味。

    Steps to make 麻辣螺蛳

    • 1.从市场上买回来的螺蛳,要放水盆里养一天,在水里加点油,使其体内的脏东西彻底排掉,然后用剪刀剪去尾部,用水多冲洗,直至水清澈。
    • 2.葱姜切片,花椒、辣椒碎备用。
    • 3.锅热入油,放葱姜煸香。
    • 4.放辣椒碎炒香。
    • 5.倒入螺蛳翻炒。
    • 6.放料酒。
    • 7.放白糖,老抽调色,翻炒。
    • 8.倒入开水,没过螺蛳,大火烧开,转中小火,烧三十分钟。
    • 9.调入盐,大火收汁。汁不要收干了,留点。
    • 10.出锅,撒上香葱末。
