这道干煸尖椒肥肠,肠片煸得脆脆的,有点像猪肚,再加上也脆脆的尖椒片,吃起来又脆又辣,非常过瘾。只是洗这肥肠哟。。。特意问老妈清洗的方法,花了将近半小时才搞定。

  • 大葱50克
  • 小米辣5个

  • 大蒜2瓣
  • 料酒1汤匙
  • 白糖1/2茶匙
  • 生抽1/2汤匙
  • 面粉(洗肥肠用)2汤匙
  • 粗盐(洗肥肠用)1汤匙
  • 白醋(洗肥肠用)1汤匙

Steps to make 干煸尖椒肥肠

  • 1.原料准备好;
  • 2.配料准备好;
  • 3.肥肠剖开放入盆中,放入面粉用力揉搓三四分钟,把内壁上的肥油清理干净(第一次清洗);
  • 4.冲洗干净,再放入粗盐;
  • 5.倒入米醋,再用力揉搓几分钟,冲洗干净,这时的肥肠基本没异味了(第二次清洗);
  • 6.把肥肠放入锅中,加入适量水,放入料酒、葱段、姜片,大火烧10分钟;

  • 8.与此同时,尖椒切片,小米辣斜切成丝,大葱切丝,姜片切丝,大蒜剁沫;
  • 9.煮过的肥肠,一点味都没了,不过变少了很多;

  • 11.锅内入少量油,下入姜蒜炒香,下入肥肠小火煸炒;
  • 12.煸至两面呈金黄色,即可放入白糖;
  • 13.接着倒入生抽上色;
  • 14.把尖椒和小米辣倒入锅中,转大火翻炒;
  • 15.炒至尖椒断生,下入葱丝快炒10秒钟;
  • 16.最后入盐调味即可;
