自制春饼
“立春”意味春回大地,万物复苏。吃春饼是我国的传统习俗之一,俗称嚼春、咬春、或者尝春。吃春饼有喜迎春季,祈盼丰收之意。自制春饼其形如薄如蝉翼、口感柔软且韧弹(不易撕破)、既使凉了吃也不硬。

  • 油酥(刷饼)面粉30g

Steps to make 自制春饼

  • 1.将面反复揉搓成光滑面团(加了1个蛋清增加弹性)饧制40分钟(我饧制了1小时),不用再揉面。
  • 2.揉成条状出剂。
  • 3.分成大小均匀的剂子揉圆再饧10分钟(盖布防干)。
  • 4.将松驰的剂子擀成饼状,均匀刷上油酥。
  • 5.油酥用适量面粉,倒入热油搅拌均匀晾凉再用。
  • 6.这是10片小饼逐片刷油防粘,用手轻压匀。
  • 7.再从中间往西周擀匀,(翻面再擀平)。
  • 8.锅中水烧开,放入蒸屉纸,放入饼坯蒸制10分钟。
  • 9.取出蒸好的饼,切出周边不规则边料,将每张春饼轻轻分离开。
  • 10.一共蒸了两锅,逐片分离。
  • 11.春饼薄如蝉翼,柔软洁白。
  • 12.张张透明,韧弹不破。
  • 13.既凉了吃口感也不硬,自配方春饼受到家人一致好评。
  • 14.自制春饼颜值高,效果好。
  • 15.炒了盘韮菜炒土豆丝可卷菜吃,春季吃韮菜有生发的寓意。
