豆豉香辣烤鱼
烤鱼是最近一年来流行热度很高的一道美食,武汉也有这么一个特色烤鱼餐馆,总是有人愿意排队等候,我也被常常惦记着,隔断时间约着好友去解解馋。 这麻辣烤鱼,集麻,辣,鲜,香于一身, 鱼肉细嫩, 汤汁鲜美, 而配菜也充分吸收了鱼的鲜美滋味,比起鱼肉来, 也毫不逊色, 都是那么让人馋。

     这两天整理冰箱,发现还剩有半条鱼,于是在家里琢磨着如何做烤鱼来,自己不太能吃辣椒, 就将部分辣椒替换成香味独特的豆豉酱; 加入喜欢吃的藕片和千张,其实说起来豆制品和鱼是最佳拍档, 所以一定要加点;还可以放入其他你喜欢的配菜,这样简便但又绝对够味的一道美味就出烤箱啦,麻辣鲜香,绝对挑战你的味蕾。

Steps to make 豆豉香辣烤鱼

  • 1.将草鱼表面斜划几刀, 在加入盐, 大葱,姜片和料酒抹均匀,腌制十五分钟;
  • 2.腌好的鱼表面刷层油放入预热好180度烤箱中烤上十分钟;
  • 3.拿出来换个盘中再刷层油再烤十五分钟 ;
  • 4.锅烧热,放入适量油,加入豆瓣酱和豆豉酱翻炒;
  • 5.煸炒出香味后再加入大葱, 姜片和大蒜瓣一起翻炒;
  • 6.翻炒几下后加入藕片和千张丝继续炒,加入点高汤;
  • 7.炒到它们刚刚断生后倒入,铺在鱼的表面上 ;
  • 8.继续放入烤箱中烤制十分钟;
  • 9.端出来表面上撒上香菜段即可。
