紫薯冰皮月饼
冰皮月饼,每年中秋必做,发现还是紫薯馅最受欢迎,今年加了点色彩,更加迷人,主要是这次的这个方子不沾,不用手粉,看上去更加清爽了。

  • 粘米粉50克
  • 玉米淀粉25克
  • 低粉25克
  • 牛奶225克
  • 炼乳2汤匙
  • 猪油35克
  • 50克

Steps to make 紫薯冰皮月饼

  • 1.紫薯洗净切块放锅里蒸熟过筛。
  • 2.炒锅小火放黄油完全融化。
  • 3.倒入紫薯泥翻炒均匀,加糖翻炒均匀,最后加糯米粉炒至完全融合。
  • 4.炒至能团成团。
  • 5.均匀分成25克每个的小球。
  • 6.把所有材料搅拌均匀,放热锅上边加热加搅拌一会。
  • 7.直到无颗粒半夜后盖保鲜膜,盖上蒸25分钟左右取出。
  • 8.搅拌均匀。
  • 9.稍冷却后揉成光滑的面团。
  • 10.分成25克一个的小团。
  • 11.等面团完全冷却后,取一小球按扁。
  • 12.包入紫薯馅后用虎口朝上收起,最后收圆。
  • 13.装入模具,用手来回压几下。
  • 14.推出模具即可。
  • 15.取其中一份加紫薯粉揉均。
  • 16.分成7克左右一份,按在模具里,再放入包好的紫薯冰皮月饼,
  • 17.一起按压后脱模。
  • 18.依次做完。
