  • 南瓜粉25g
  • 叉烧月饼馅400g

Steps to make 苏式月饼——玉兔抱金月

  • 1.先制作油酥:低粉95g,南瓜粉25g,酥油60g(不用软化),混合揉成面团。
  • 2.裹上保鲜膜静置30分钟。
  • 3.再制作油皮:中筋面粉、糖粉、糖,加酥油(不用软化)揉搓成雪花状。
  • 4.加水揉成面团,裹上保鲜膜静置15分钟。
  • 5.两种面团等分成8份。
  • 6.油皮包油酥滚圆。
  • 7.用擀面杖压扁,轻轻擀成长约25cm的牛舌形状,尽量不要破皮。
  • 8.卷成卷静置15分钟。
  • 9.再竖着擀,重复一遍上面的步骤。
  • 10.一切两半,把纹理漂亮的一面朝外擀成饼状。
  • 11.叉烧馅分成25g一个,慢慢包成圆形,注意捏好收口。
  • 12.收口朝下放入烤盘。
  • 13.利用静置面团和烤制的时间做翻糖小兔子。
  • 14.烤箱预热,150度上下火,20~25分钟。
  • 15.点缀,完成,是不是很可爱呢^_^
