Steps to make 鸡蛋灌饼

  • 1.用温水把加入少许盐的面粉和成柔软的面团,盖上保鲜膜松弛十分钟。
  • 2.分成三个大面团和三个小面团。
  • 3.取其中一个大面团,擀成包子皮状;取一个小面团,周身沾上油,放好。
  • 4.包成包子状。
  • 5.收口向下,再次擀开,厚薄随意(当然也不能太厚)。
  • 6.鸡蛋打散,放入少许盐和葱花调匀。
  • 7.平底锅放少许底油,开始烙饼。如果饼擀的薄,那么很快就会起大泡,这时把泡用筷子挑开,灌入蛋液。
  • 8.如果饼擀的稍厚,待底面稍固定后即翻面,以利于饼出大泡。
  • 9.两面稍加烙制,饼已鼓起大泡成功分层。再次翻面。
  • 10.用筷子挑破一个小口,倒入蛋液,小火烙制。
  • 11.翻面继续烙5-10秒钟,至蛋液完全凝固即可关火。
