    Steps to make 青椒肉丝

    • 1.青椒150g、洗净。
    • 2.青椒去除尾部、从中间刨开去籽、去筋。
    • 3.切丝、去除尾部和筋的青椒切出丝来会更好看。
    • 4.猪精瘦肉洗净切丝。
    • 5.把切好的肉丝放入碗内加淀粉、蛋清、鸡精抓均上浆、腌制一会。
    • 6.炒锅上火烧热、到油、至油温3-4成热时倒入肉丝翻炒。
    • 7.待肉丝炒至发白断生时盛出装盘待用。
    • 8.炒锅再次上火到底油爆香葱姜末、倒入青椒丝、肉丝调味、大火快炒。
    • 9.最后用水淀粉勾薄芡、不可时间过长、否则肉丝变老、青椒丝变软、就不好吃了。
    • 10.炒好的青椒肉丝、肉丝滑嫩、青椒丝脆爽。
