牛角小面包
做几个小牛角面包,当成第二天的早餐来吃,实在是很不错。

  • 牛奶170克
  • 酵母3克
  • 白糖30克
  • 黄油18克
  • 表面刷蛋液少许

Steps to make 牛角小面包

  • 1.除黄油外的所有材料入面包桶中
  • 2.启动揉面程序,待面团光滑后,加入软入的黄油,继续揉面
  • 3.待面能扯出稍具透明的大片薄膜来,揉圆,进行基础发酵
  • 4.面团是原来的2.5倍时,手指蘸面粉,在面团顶部戳洞,不塌陷不回缩,发酵成功
  • 5.面团取出,排气,分成两等份,分别揉圆,松弛十分钟
  • 6.取其中一个面团,擀成长方形
  • 7.再分成十个等腰三角形
  • 8.取其中一个三角形面片
  • 9.从宽边往顶角卷起,形成一个小牛角状
  • 10.依次将所有的面片都卷成小牛角状,摆放在不粘烤盘中,于温暖湿润处进行二次发酵
  • 11.待面包生坯是原来是二倍大时,表面刷少许蛋液,烤箱开始预热,180度
  • 12.面包生坯进预热好的烤箱中层,180度上下火,15-20分钟
  • 13.出炉后,晾架上晾凉后封袋保存
  • 14.小小的牛角包,当早餐当零食都不错
  • 15.内部组织也很好
