  • 黑糯米醋150ml
  • 鸡蛋5个

Steps to make 猪脚姜

  • 1.提前3-5天准备适量老姜,切厚片,拍松纤维,便于入味。
  • 2.将老姜晾干。或者用炒锅炒至半干再彻底晾干。
  • 3.取适量干姜本次使用,其余装袋。
  • 4.准备新鲜干净的猪蹄,洗净后换清水浸泡四小时以上。
  • 5.浸泡出血水后,洗净备用。
  • 6.煮锅中倒入大量清水,放入猪蹄,开火煮沸。
  • 7.煮沸后捞出猪蹄。
  • 8.用温水洗净猪蹄。如果喜欢口感脆一点的话,用冷水冲洗。
  • 9.猪蹄沥干水分备用。
  • 10.沥干水分的猪蹄。
  • 11.另取一锅煮鸡蛋,冷水入锅,煮八分钟即可。鸡蛋煮好捞出后放入冷水中浸泡几分钟再小心剥皮备用。
  • 12.准备添丁甜醋和黑米醋。
  • 13.大号砂锅中倒入甜醋、黑米醋、红糖和干老姜。
  • 14.大火烧开后,再转中火继续熬煮。
  • 15.熬煮至浓稠。
  • 16.加入鸡蛋和猪蹄,醋汁没过猪蹄,煮至猪皮变软烂即可。
  • 17.成品味道独特,营养丰富。
