剁椒蒸茄子
吃的时候,要将每一根茄子都尽量在味汁中浸泡一下再吃,这样更入味!
不要看这表面白白的,担心看起来象生的而且不入味,其实嫩茄子是极易熟的,切开以后,茄子的纤维很容易吸收味汁,只要稍微浸泡一下,颜色立马就会变深,味道就会很足了。
这道菜的灵魂就在味汁上,好吃不好吃,就在调味上,所以油盐酱醋的比例要掌握合适,葱、姜、蒜等提香提味的作料也是必不可少的!

    Steps to make 剁椒蒸茄子

    • 1.新鲜长茄子三根,尽量挑选比较嫩的茄子为好,过水清洗干净。
    • 2.切去蒂把,改刀成两段,然后切成均匀的细长条状,皮朝下,在盘中码放整齐。
    • 3.冷水上锅蒸,盖上锅盖,大火烧至水沸腾,改小火,再蒸7-8分钟。
    • 4.蒸茄子的时候,将姜、蒜切成末,置于碗底,加入一勺盐、少量鸡精、胡椒粉、三大勺镇江香醋、一勺凉拌酱油、一大勺剁椒酱、少量蚝油、两大勺香麻油调匀,另将小葱切成末备用。
    • 5.7-8分钟后,将蒸锅打开,将调好的味汁均匀的浇在茄子上,盖上锅盖,再蒸个5分钟左右即可关火。
    • 6.最后将蒸好的茄子取出,表面撒上葱花,一盘美味的剁椒蒸茄子就做好啦!
