【炸酱面,花样做】:香辣牛肉炸酱面

Steps to make 【炸酱面,花样做】:香辣牛肉炸酱面

  • 1.牛柳纵切成条,再改刀切成粒。
  • 2.牛肉粒加水淀粉抓匀,表面淋食用油腌制20分钟。
  • 3.豆瓣酱100g、辣椒酱20g、清水少许混合待用。
  • 4.胡萝卜洗净切片用饼干模具压成花。
  • 5.黄豆、胡萝卜花依次入沸水锅中焯熟,捞出沥水。
  • 6.面粉中加少许盐,缓缓倒入适量清水揉成光滑略硬的面团,放入冰箱冷藏室静置20分钟待用。
  • 7.面团取出后擀成长条薄片,切成菱形小面片。
  • 8.小面片短角边在竹帘上一捏成螺旋状。
  • 9.做成若干细条螺旋面。
  • 10.锅中油烧到七成热,入腌好的牛肉粒滑至六七分熟,盛出。
  • 11.锅置火上油烧热,下入姜末爆香。
  • 12.倒入混合的酱料搅匀。
  • 13.倒入焯熟的黄豆、滑油的牛肉粒翻炒。
  • 14.翻炒至酱汁出红油,加白砂糖调成酸甜适中,继续翻炒。
  • 15.直至浓稠即可。
  • 16.锅中水烧沸,放入螺旋面搅散后煮至断生,捞出过冷水盛在碗内。
  • 17.码上胡萝卜、豌豆,加牛肉肉酱即可食用。
