Steps to make 松鼠鱼

  • 1.茄子选用长茄子(这不是废话吗?在四川基本见不到北方的圆茄子),洗净,拦腰切断截成约4厘米的段,切去三个边皮,保留一边。
  • 2.打45度花刀,深度要有茄段的4/5左右。一个方向切完再切另外个方向,要注意的是,刀的运动幅度越小越好,横向走刀的幅度大了,非常容易把花切烂,小心点,这一步比较关键。
  • 3.切好后稍微凉凉水气,否则容易折断,打个蛋液,准备面粉,茄子拖点蛋液挂面粉。
  • 4.起油锅,油温大约六成热下锅炸。
  • 5.事先准备好碗汁:适量果珍、少许番茄酱、味精、淀粉等等,另起油锅,下葱、姜、蒜略炒,下入兑好的碗汁,调整好芡汁浓度(二流),浇在摆好盘的“鱼”身上,好了!!
