自制咸鸭蛋
腌咸鸭蛋的方法我试过两种,一种是用酒浸湿鸭蛋,再裹一层盐,可是这样盐的这样腌的鸭蛋太咸了。后来又用这种饱和盐水腌,我个人觉得咸度正好,而且不会出现鸭蛋入味不均匀。我一般腌45天左右,个个出油。

Steps to make 自制咸鸭蛋

  • 1.新鲜鸭蛋刷洗干净表面,晾干水分。一定要彻底晾干。
  • 2.腌鸭蛋的容器洗干净,控干水份。瓶子一定要清洗干净,彻底晾干水分。
  • 3.取干净的无水无油的盆,倒入1500ML凉开水,加入盐300克,高度白酒150ML,搅拌至盐全部融化。
  • 4.将晾干的鸭蛋放入容器中。
  • 5.倒入调好的盐水,使每个鸭蛋都浸泡在盐水中。
  • 6.封上保鲜膜,盖盖,密封腌制45天左右。
  • 7.取腌制好的鸭蛋,冷水入锅,开锅后小火煮20分钟左右。
