Steps to make 糖醋鱼

  • 1.准备好鲤鱼一条,料理好清洗干净
  • 2.去掉筋后。从头部那头开始,倾斜约45度角,把鱼打上花刀,然后在距离约3厘米的地方接着片上一刀,一直片完
  • 3.打好花刀的鱼放入较大的盘里,均匀的抹上一层料酒和盐,然后加入拍碎的生姜、葱白,抓匀腌制半小时,去腥、入味。撒上干面粉
  • 4.把面粉和淀粉混合在一起,加入少许水,搅拌成一碗浓绸的面糊
  • 5.把鱼挂上一层面糊。
  • 6.放入烧热的油中炸至表皮定型,再转中火炸熟,然后大火复炸一遍,至外酥里嫩
  • 7.捞出沥油后摆入盘中。
  • 8.炒锅内留少许油,放入葱花、姜末、蒜末爆香。倒入番茄酱,翻炒
  • 9.加适量的白醋和白糖,水煮开。然后淀粉水勾芡
  • 10.起锅浇在鱼身上即可。
  • 11.这次买的鱼太瘦了,所以造型不好,大家凑合看吧,味道还是不错的
