奶酪蔓越莓小面包
很好吃的一款早餐小面包,方子参考了我的老师爱和自由的香甜芝士包。因为模具不同,表面装饰也不同(材料不全),所以真真是山寨的,而且因为忙其他的事情,基础发酵还有点发过了,所以组织稍显粗糙,自由老师不要生气啊。

  • 俄罗斯面包粉175克
  • 低筋面粉75克
  • 即发干酵母3克
  • 细砂糖40克
  • 3克
  • 全蛋液30克
  • 130克
  • 黄油30克
  • 奶油奶酪200克
  • 糖粉80克

Steps to make 奶酪蔓越莓小面包

  • 1.奶酪馅料制作:奶油奶酪室温软化,加入糖粉用橡皮刮刀搅拌均匀,加入切碎的蔓越莓干,拌匀即可。
  • 2.除黄油以外的所有原料放在一起揉至面筋扩展,表面光滑,加入黄油继续揉至扩展阶段。
  • 3.揉好的面团表面覆盖保鲜膜,放在温暖处进行基础发酵。
  • 4.基础发酵结束后,将面团取出压扁,排出空气,分割成8等份,滚圆后松弛15分钟。
  • 5.松弛后的面团擀成圆形,放上馅料。
  • 6.收好口,收口朝下放入纸膜中,放在温暖湿润处进行最后发酵;发酵好后表面涂少许蛋液。
  • 7.烤箱预热180℃,中层,上下火,20分钟左右。出炉后放烤网上晾凉。
