奥尔良鸡肉包子

Steps to make 奥尔良鸡肉包子

  • 1.面粉加水,酵母活成面团,揉圆,发酵至两倍大。(面粉:水约为2:1,酵母5克)
  • 2.鸡腿肉洗净,去皮,去骨,切成小丁,放入盆中。
  • 3.鸡胸肉洗净,切去脂肪,筋膜,切块,放入绞肉机中。
  • 4.加入姜粉和小苏打粉,分次加水料酒和水搅打成肉泥。
  • 5.将肉泥和肉丁搅拌均匀。
  • 6.根据自己的口味加入奥尔良腌料,搅拌均匀。
  • 7.将拌好的肉馅冷藏一个小时左右。
  • 8.取适量发好的面,排气,揉匀,搓条,切剂子,擀成中间厚边缘薄的面片。
  • 9.包入适量肉馅。
  • 10.蒸笼铺上硅胶垫或油纸,将包好的包子间隔开放入,再次醒发15分钟。
  • 11.冷水上锅,大火上汽后,转中火,蒸15分钟左右。
  • 12.剩下的肉馅和面做成水煎包,颜色金黄,底部酥脆,好吃停不下来。
