Steps to make 清脂能量素菜之双椒炒香干

  • 1.材料准备好:南方的豆腐香干软、弹、嫩、厚,杭椒、红辣椒、蒜薹清洗干净。
  • 2.香干切厚约3毫米的大片,如果是北方较薄较硬的豆腐干,最好斜切大薄片,以增加入味面积。
  • 3.辣椒不去籽,斜切长丝;带籽的辣椒除了切的时候省事,吃着更够味;蒜薹切小段,没有蒜薹用青蒜或者大蒜代替。
  • 4.炒锅中倒适量油,将青红辣椒入锅煸炒微微变软,充分释放辣味。
  • 5.香干入锅,中火翻炒,这一步需要火力大一点儿,时间长一点,让油脂充分包裹住豆腐干,使辣椒汁也能渗透到豆腐干里。
  • 6.豆腐干明显变柔软了,倒入蒜薹段。
  • 7.撒一点盐,盐不要多,因为这道菜的汁水少,需要靠下一步的调料来增加湿度。
  • 8.对了,多倒点酱油,翻几下,让每一片豆腐干都裹着酱油汁,又香又入味。
