家常臊子
都是说臊子面臊子面,可来发菜时发才现带着面的照片不见了。也不知道这手机是不是抽风了,丢了我好些菜菜的照片。无面,所以,只是家常臊子。说是家常臊子,是因为没有按常吃臊子来备材料,而是用家里现有的材料,不拘于常规,自由发挥,也算的上是别有风味

  • 五花肉250g
  • 蒜苔150g
  • 胡萝卜150g
  • 青椒50g
  • 黑木耳50g
  • 冻豆腐80g

Steps to make 家常臊子

  • 1.肥瘦相间的猪肉,切成大小相同丁
  • 2.胡萝卜和蒜苔,切成大小相同丁
  • 3.辣椒切小段
  • 4.木耳需要先泡发后再切
  • 5.锅中油烧热,放入肉丁,炒至微黄(最好是先放肥肉,微黄后放入瘦肉,炒至变色,我偷懒了,一起放的)
  • 6.这下该按食材的特质,陆续的放到锅里来炒,先放的就是胡萝卜
  • 7.待胡萝卜稍微有些变软,就可以放入蒜苔
  • 8.再是放青椒,这个时候已经可以放适量盐了,记得别一次放太多,后期还可再加
  • 9.蒜苔炒的颜色显的更加青绿时,放入黑木耳
  • 10.上述材料放齐后,再翻炒1、2分钟,这时可以放入醋,烹20秒左右,然后放入水(最好是热水),加入生抽和其他调味料,这时可以试下咸淡,试后调节生抽的量,也可以再加盐。
  • 11.大火烧开后,放入切好丁的冻豆腐(这是自己做的豆腐拿去冻的),再次沸腾后,改小火,烧至汤汁稍微变得浓稠即可。
