  • 1.鸡爪清洗干净剪掉指甲,红椒、蒜头切断备用;
  • 2.水煮开后,倒几滴油;
  • 3.放入鸡爪、姜和料酒,大概煮十五分钟后起锅;
  • 4.煮熟捞出并用清水冲洗干净备用;
  • 5.将水烧开,放入红椒、蒜头、红九九火锅底料75g(重口味者可再加10—15g底料);
  • 6.加热待底料化开;
  • 7.将焯水过的鸡爪放入卤汁中,再加热约三分钟熄火,盖上锅盖,浸泡约30分钟(想要再入味些浸泡时间可加长)后装盘;
