巧克力酥皮泡芙
酥得掉渣的脆皮泡芙。

Steps to make 巧克力酥皮泡芙

  • 1.先做泡芙酥皮,将可可粉,低粉、糖粉混合。
  • 2.加入软化的黄油。
  • 3.揉成酥皮面团。
  • 4.放入油纸中,擀压成片。
  • 5.用圆形模具压成小片。放入冰箱冷藏备用。
  • 6.黄油,盐加入牛奶中,加热。
  • 7.加热至融化,离火。
  • 8.倒入过筛好的中粉,搅拌。
  • 9.按压翻拌至没有干粉。
  • 10.再小火加热快速翻拌至锅底出现薄膜,离火。降温。
  • 11.降温的时候,准备好三个鸡蛋。
  • 12.打散成蛋液。
  • 13.面糊差不多50度左右,将蛋液分三次倒入面糊中。
  • 14.翻拌。
  • 15.当刮起的面糊呈倒三角状即可。
  • 16.倒入裱画袋,挤出圆球状,覆盖从冰箱拿出的巧克力酥皮片。入烤箱,180度、中层、上下火35分钟左右。
  • 17.出炉,膨胀的圆鼓鼓。酥得掉渣。
  • 18.冷却后,打发奶油填充即可。
