菜干粿
清明节家乡的习俗里要吃的清明粿,是一种饭团,捞米饭蒸熟后里面加了炒好的竹笋、梅干菜、肉丝、香菇,藠头叶等然后捏成一个球形。

  • 干香菇几朵
  • 胡萝卜半根
  • 春笋一根
  • 藠头叶一把
  • 老抽少量
  • 料酒一勺
  • 鸡精一勺

Steps to make 菜干粿

  • 1.大米淘洗干净,冷水入锅,边煮适当搅动一下,避免糊锅。
  • 2.煮到可以捏碎米粒。
  • 3.捞出控掉米汤,蒸熟备用。
  • 4.锅里倒入少量的食用油,再放入肥肉丁煸炒出油。
  • 5.去掉多余的油后,放入瘦肉煸炒变色。
  • 6.加入老抽,生抽,,蚝油,盐,鸡精料酒焖煮一会儿。
  • 7.之后加入改刀和处理好的梅干菜,香菇,胡萝卜,春笋。
  • 8.翻炒入味,根据咸淡再适当调味。
  • 9.最后放入藠头叶翻炒均匀。
  • 10.加入蒸熟的米饭。
  • 11.翻拌均匀,关火。
  • 12.再团成饭团。
