七巧面鱼
我所居住的小城,人口不过80多万,地域也不是很辽阔,就这小小的城,城南城北城东城西,包括我打小居住的城里,在过七夕节都会有所不同。但现在过节时,在城里面,将各区的风俗汇入一起,临近过节一个多月前,各种特色节日食品都上阵了。
这个炸面鱼,其实一看便知,就是一做成鱼形的面团,放到油锅里炸,这个,是在我们城东南的地区盛行并至今流传的。这次,我用的模具比平常人家的要粗小些,但是形似的。

Steps to make 七巧面鱼

  • 1.面粉加温水,酵母、一点盐,约5克揉成光滑的面团醒发。
  • 2.醒发至两倍以上大,拉开能看到粗大的孔洞。
  • 3.将面团排气揉匀,这时的面团要稍软些,需要手粉来防粘。
  • 4.均匀的分成每个约80克的小面团。
  • 5.用手搓成长条状备用。
  • 6.准备鱼形模具。
  • 7.将搓好的长条面条光滑的一面沾面粉。
  • 8.放入模具中压实,边缘多余的部分向中间略推。
  • 9.手持模具的把,轻磕出鱼形面团。
  • 10.醒发约三十分钟。
  • 11.入八成热的油锅中保持中火慢炸。
  • 12.最后,转大火炸上色。
