红豆沙蛋黄月饼

Steps to make 红豆沙蛋黄月饼

  • 1.转化糖浆,枧水和玉米油充分搅拌均匀。
  • 2.放入面粉揉成面团。
  • 3.揉好的面醒发半小时。
  • 4.咸鸭蛋取出蛋黄。
  • 5.取出的蛋黄刷一下白酒后烤箱烤上下火180度差不多烤十分钟。
  • 6.将豆沙分成每个27g后揉圆。
  • 7.蛋黄一个分切成半,蛋黄称重半个有8或9g,月饼皮也过称分成15g后揉圆。
  • 8.取一豆沙球按扁,放入蛋黄后包紧。
  • 9.面皮球按扁放上豆沙蛋黄馅,用大拇指虎口位置慢慢将面皮往上推收紧。
  • 10.模具洒上面粉后磕出,将月饼放入模具中印出花纹。
  • 11.印好的月饼轻轻推出放置在铺了油纸的烤盘上。
  • 12.烤箱上下火180度预热一下,烘烤5分钟左右取出。
  • 13.取出刷上薄薄一层蛋黄液。
  • 14.刷好蛋液后继续入烤箱上下火180度烤20分钟。
