【苏菜】酒酿饼
寒食节吃“救娘饼”(酒酿饼)的由来苏州人吃酒酿饼,传说是元朝末年开始的。当时苏州有一张士诚(1321年---1367年),因为误伤人命,他带了老母逃命,当时正逢寒食节,又无处可以乞讨,几天没有进食了。他的老母饿得晕了过去,张士诚见就要被饿死而泣不成声。一位老伯见张士诚很孝顺母子十分可怜,用家中仅有的几个酒糟做了饼给了他,张士诚的娘终于得救了。

几年后,张士诚在苏造反称王,想起当时的救命恩人,为了不忘记此事,张士诚下令寒食节吃酒糟饼,名叫“救娘饼”。后来张士诚又被朱元璋活捉,在押往应天府的路上自尽。当时没有人再敢叫那饼为“救娘饼”,可是苏州人对张士诚还是很有感情,悄悄把“救娘饼”改叫“酒酿饼”。至今苏州人春天还有吃“酒酿饼“的习俗。

Steps to make 【苏菜】酒酿饼

  • 1.准备的材料。
  • 2.酵母倒入温热的酒酿里融化,再慢慢倒入面粉和淀粉中,不停用筷子搅拌成面絮状。
  • 3.不停揉搓成“三光”面团。
  • 4.盖上保鲜膜放温暖处发酵至2倍大取出,再揉搓。
  • 5.揉搓成长条。切成挤子。
  • 6.擀成中间厚四周薄的面皮,包入豆沙馅搓圆,封口朝下,用擀面杖轻轻地擀圆。
  • 7.往不粘锅中倒油,小火煎至成两面金黄即可。
  • 8.煎至好的酒酿饼装盘。
