蛤蜊蒸蛋
蛤蜊蒸蛋也被叫做珍珠聚宝盆。蛤蜊被称为“天下第一鲜”,蛤蜊蒸蛋是粤菜之一,味道鲜美,营养丰富,老少皆宜。

  • 鱼露5毫升
  • 生抽5毫升
  • 白米醋2毫升
  • 香油1毫升

Steps to make 蛤蜊蒸蛋

  • 1.食材:蛤蜊、鸡蛋等。
  • 2.蛤蜊放入淡盐水中,静养2小时,使其将体内的细沙吐干净。
  • 3.煮水,水开后放入生姜片、清洗干净的蛤蜊,煮至蛤蜊全部张开壳后,迅速捞出。
  • 4.鸡蛋打成蛋液,按蛋液与水比例1:1.5,加入凉开水,搅打均匀。将蛤蜊摆入深盘,用漏勺将蛋液过漏到盘中,蛋液至蛤蜊1/3处即可。
  • 5.盖上保鲜膜,放入蒸锅中,上汽后,蒸5-8分钟。
  • 6.制作调料汁:倒入鱼露、生抽、白米醋、香油,搅匀。
  • 7.蒸好后,淋入调料汁,撒香葱即可。
