    • 1.三黄鸡洗净,斩大件。
    • 2.锅中水没过鸡肉,大火煮滚后随即捞出鸡肉洗净。
    • 3.鸡肉放入冷水锅中,加入姜块、一勺料酒,大火煮沸,撇去浮沫。
    • 4.转至文火慢炖一个小时,滤出鸡汤备用。
    • 5.口蘑、金针菇、香菇去蒂部洗净,香菇打花刀;茼蒿、黄豆芽去根洗净。
    • 6.内酯豆腐用蔬菜切模具切花朵状,入淡盐水中浸泡待用。
    • 7.鸡汤倒入锅中,调入海带、柴鱼片,大火煮沸。
    • 8.用漏勺盛着适量的味增,放到汤里面用筷子搅散,略煮片刻调入适量盐即成汤底。
    • 9.汤底滤出海带、柴鱼,倒入火锅锅中。
    • 10.上桌与配菜菌菇、鲜虾、内酯豆腐,蘸小料享用。
