带鱼二吃,连鱼肉鱼骨都不放过~龙珠带鱼卷
带鱼这样做,妈妈们不用担心孩子吃鱼,鱼刺卡喉的问题。味道鲜美,小孩子一口一块,吃起来特别过瘾。
记得徐文兵老师在《饮食滋味》中,”小孩子如果肠胃功能消化不好,就可以试着把带鱼做好给他吃”。

  • 带鱼中段3条
  • 芦笋8根
  • 鲜香菇几朵
  • 生姜1块
  • 香葱2棵
  • 牙签数个
  • 食用油80ml
  • 料酒2勺
  • 胡椒粉1g
  • 少许
  • 生抽2勺
  • 白糖1小勺
  • 米醋1勺
  • 蚝油1小勺

Steps to make 带鱼二吃,连鱼肉鱼骨都不放过~龙珠带鱼卷

  • 1.准备好带鱼,带鱼提前解冻。
  • 2.把带鱼的内脏处理干净,特别是那个黑色的膜很腥一定要剔除干净,洗净滤干水分;带鱼用刀把鱼肉片取下来,再把带鱼的另一面也取下,把剖下来的带鱼片一切二,放入碗中,加人切好段的香葱和生姜丝,加入料酒和胡椒粉,适量盐拌匀腌制10分钟左右。把剖下的鱼骨用同样方法腌制。
  • 3.把香菇冲洗干净切条,放入少许盐腌制;把腌制好的带鱼片,依次卷在香菇条的外面,用牙签固定好,裹上淀粉待用。
  • 4.芦笋削去老皮和根部,切段清洗干净,锅内加入水和少许盐煮开,放入芦笋焯水2分钟左右;捞出先摆入盘中。
  • 5.锅烧热放入食用油烧7分热,把带鱼卷依次放入锅中中火煎炸(因为家里做用油要考量,适当放油的量,土豪随意哦)煎炸至二面金黄滤干油取出。
  • 6.把鱼骨依次放入煎炸至金黄酥脆,滤干油放入盘中撒上椒盐粉和孜然粉(喜欢辣的撒点辣椒粉)
  • 7.准备调料汁:生抽2勺,白糖1小勺,陈醋1勺,蚝油1小勺,淀粉2克加适量凉水调匀。
  • 8.把锅内刚炸鱼的油倒掉,把调料汁倒入,再把带鱼卷倒入拌匀,加入适量开水煮至入味黏稠,撒上芝麻。
  • 9.把牙签抽出,一个个装盘。
  • 10.新鲜入味,一口一个的龙珠带鱼卷就可以享用啦。特别是松脆掉渣的带鱼骨头,好吃到根本停不下来,一会就光盘啦。
