Steps to make 挂霜蜜红薯

  • 1.蜜红薯一个,今天买的比较大。
  • 2.去皮切成手指粗的条。
  • 3.下入锅中煮一下,煮大约六至七分熟。
  • 4.捞出投凉水控干。
  • 5.加入玉米淀粉抖匀,让梅一根红薯都粘上淀粉。
  • 6.起锅烧油,油温五六成热时下入红薯开始炸制,先不要翻动,等定住型了再翻动,用勺子一磕就散开了。
  • 7.炸至色泽金黄,表皮脆硬捞出。
  • 8.下面开始熬煮糖浆。锅中加一手勺清水,加二勺白糖,(炒菜的勺子)慢慢熬煮,开始是大泡泡。至
  • 9.熬煮到成为密集的小泡泡,糖浆粘稠,用勺子盛起再倒回去时,最后一滴能拉丝的状态。
  • 10.下入红薯条炒拌,关火用勺子不断的炒使红薯挂上糖浆。
  • 11.随着温度的降低,糖浆开始凝固发白,继续不断的翻拌使糖浆变脆,红薯均匀的挂上一层白霜既可。
  • 12.表面有一层硬壳壳,非常的脆,里面又非常的甜糯。
  • 13.颜色漂亮,香甜好吃,上桌就被抢光。
