榕城荔枝肉
我的爸爸虽然寡言少语,但是对我的关心爱护却是一点不少。小时候非常挑食,却唯独对爸爸做的荔枝肉情有独钟,绝对会美美的吃下一大碗饭,呵呵。

前两天爸爸托人从家乡捎来了几个芋头,使我又想起这道老爸的拿手菜,我虽然只有他的五六分功力,不过解馋还是可以的,呵呵。

菜色特点:酸甜适中,开胃下饭。

    Steps to make 榕城荔枝肉

    • 1.瘦肉切丁,芋头、胡萝卜洗净切丁,小葱、大蒜切末。
    • 2.瘦肉用少许盐,食用油,胡椒粉腌渍20分钟。
    • 3.热锅烧油,将芋头丁下锅炸至金黄,捞起沥干油备用。
    • 4.将腌渍好的瘦肉拍上淀粉,拌匀。
    • 5.瘦肉下锅炸熟,捞起沥干油备用。
    • 6.将炸肉的油装起,剩些许在锅中,下入蒜末炒出香味。
    • 7.下入胡萝卜丁翻炒片刻。
    • 8.倒入生抽,少许水,番茄酱,香醋,少许白糖继续翻炒。
    • 9.用水淀粉勾薄芡,将肉和芋头一起下锅翻炒均匀,调入味精。
    • 10.出锅,装盘,撒葱花。
