生爆鳝卷
湖北的菜式。精选粗壮鲜活的黄鳝,斩头去尾,切成鳝段,勾芡、滑油,翻炒,直至鳝片软嫩。虽不及辣菜的鲜爽,却别有一番醇香滋味。

  • 1.材料备齐。冬笋切片,口蘑切片。葱,切葱花、
  • 2.鳝鱼,沥干血水,切段,切单边穗形花刀。嫌麻烦可以不切,我切的好玩,觉得这样更入味。
  • 3.将处理好的鳝鱼加盐、淀粉搅拌上浆。
  • 4.在碗中倒入料酒、盐、鸡精、生抽、白糖、醋、淀粉调成卤汁备用。
  • 5.锅中入油,旺火烧至油面起烟。放入鳝段。
  • 6.待成卷形后,捞出沥油。
  • 7.原锅内留底油,放入冬笋,香菇片略炒。
  • 8.倒入调好的卤汁,待其浓稠。
  • 9.放入鳝鱼卷,翻炒均匀。
  • 10.起锅装盘,撒上葱花和胡椒粉即可。
