  • 青蒜1棵
  • 高汤200毫升

Steps to make 麻婆豆腐

  • 1.食材洗净。
  • 2.青蒜切段。
  • 3.豆腐切小块备用。
  • 4.锅内不放油,温热,倒入花椒粒,小火慢慢炒香,颜色变深。
  • 5.倒案板上,放至温凉,擀面棍碾碎,即为花椒碎。
  • 6.半锅沸水中加少许盐, 放入豆腐焯烫10秒。
  • 7.捞出过冷水,控干水分备用。
  • 8.起油锅,油热,放入牛肉馅,慢慢炒至酥香,推到一侧。
  • 9.另一侧放入豆瓣酱、豆豉小火慢慢炒出红油。
  • 10.放入姜末、辣椒粉炒出香味,加入高汤,大火煮沸。
  • 11.放入豆腐、酱油、白砂糖、盐,煮3分钟。
  • 12.淋入水淀粉,轻轻晃动锅,使汤汁包裹每块豆腐。
  • 13.放入青蒜,大火收汁。
  • 14.盛入盘中,撒上花椒碎。
  • 15.出锅,摆盘,撒上适量青蒜,即可。
