  • 郫县豆瓣酱50克
  • 淀粉25克
  • 料酒10克
  • 干辣椒15克
  • 花椒5克
  • 大葱1段
  • 大蒜7瓣
  • 生姜5克
  • 高汤400毫升
  • 酱油15毫升
  • 白砂糖10克

  • 1.食材洗净。
  • 2.按量备好。
  • 3.猪肉切片。
  • 4.加淀粉,料酒,盐和少许水抓匀。

  • 7.干辣椒剪段。
  • 8.锅里放油,放干辣椒和花椒。

  • 13.炒出红油,加入骨汤烧沸。
  • 14.放入肉片,用筷子划散,肉片变色时加入酱油、糖。
  • 15.煮好的肉片和汤汁一起倒入碗中。
  • 16.干辣椒和花椒碾压。
  • 17.再用刀剁碎。
  • 18.撒在肉片上,再撒蒜末和剩余葱花。
  • 19.再烧热少许油。
  • 20.微微冒烟后,泼入碗中即可。
