  • 转化糖浆140克
  • 莲蓉250克
  • 豆沙250克
  • 花生油50克
  • 枧水4克
  • 蛋黄水蛋黄+4分之一蛋白+15克水

  • 1.枧水加入转化糖浆,混合均匀
  • 2.倒入花生油,继续混合均匀
  • 3.筛入中筋面粉,用刮刀拌匀,再用手揉成光滑的面团
  • 4.盖上保鲜膜静置松弛3个小时
  • 5.解冻好的咸蛋黄在白酒上滚一圈去腥,烤箱预热180度烤8分钟
  • 6.将豆沙、莲蓉平均分成40克,包入咸蛋黄
  • 7.饼皮平均分成25克一个,包入馅料,收口搓圆
  • 8.放入月饼模具,压出月饼形状
  • 9.烤箱预热至200度,月饼表面喷点水,烤5分钟定型
  • 10.取出涂上薄薄一层蛋液,再烤15分钟即可。
