鱼香茄子煲
这个菜应该属川菜系,也是我最喜欢的一个菜系,可惜我的胃不怎么好,辣的东西不敢吃,真是折磨人。这菜一出锅,满屋香味,实在很吊胃口,怎奈我这不争气的胃,只尝了一口。回味~~~回味~~~再回味~~~

Steps to make 鱼香茄子煲

  • 1.热锅热油放入切好的茄子,小火将茄子煎软,茄子快煎好时将胡萝卜放入略煎。(不用放太多油,但是要比炒菜时放的油多。火一定要小,不要把茄子煎糊了。不是俺舍不得多放油,茄子很吸油,太油腻对身体不好,不能为了好吃就忽略了健康。)
  • 2.将煎好的茄子和胡萝卜盛出备用。
  • 3.锅留底油,放葱姜末、大料炝锅。
  • 4.放入肉馅炒散变白。
  • 5.放入郫县辣豆瓣酱与肉馅翻炒均匀。
  • 6.倒入煎好的茄子和胡萝卜略炒。
  • 7.将翻炒均匀的茄子和肉馅倒入瓷煲中,加入事先调好的酱汁,再加入适量高汤或者清水,大火烧开,转小火炖15至20分钟。
  • 8.汤汁快要收尽时放入青椒条炒均。
  • 9.最后加鸡精、蒜片少量水淀粉勾芡出锅。
